When making the caramel you put the sugar in a dry pan and brown it. Then you put in butter. Put in some cream and then let it cook into the potatoes, Not only as a glace on the outside.

Not sure what your meatballs would be like, but I'd say an Asian style. Also, Frikadeller is rarely spherical, they are also fried, not boiled, and they are served with a brown gravy.
Aebleskiverne, you should simply have flipped, and the batter needed to be a bit thinner. Also looked like the pan was on the cold side. Use a very thick needle or thin netting needle to flip them. That way you get them baked on one side, then flip them and they bake on the other side. those looked very dense and not good.    See Less
