I think broadly labeling this cuisine "Afro-Caribbean" was a bit disingenuous. Some of these dishes aren't Afro-Caribbean and are actually Indo-Caribbean. Bake (the flatbread,     See More it's fried, sometimes not) for example, is from India. The curry powder, the saffron are clearly from India and of Indian influence. Even the Callaloo was heavily influenced by Indian Cuisine. In fact, it's commonly referred to as "Chorai Bhaji" (Choraiya Bhaji) in the Caribbean which is a Hindi term, native to India b/c it is literally a dish from India, all of which were brought by Indian Indentured Laborers.
I mention all this to say almost half of Trinidad's population is of Indian ancestry. I assume you knew this given you were literally on the island and saw them there first hand. You really think "curry fish" is Afro-Caribbean? for god sakes, it's curry! Indians have been making fish curry this exact way for millennia.
I mean the sweat shop you went to is literally called "Farouq's Sweets". Farouq?!?!?!??! how much more Indian can that get? Coconut fudge? that's literally Peera/Pera/Peda bruh. That is Indo-Caribbean, it originates from Mathura and Uttar Pradesh.
Even the common uses of coconut milk in the cuisine is partly, if not mostly, of Indian influence, Indians have been known to use every aspect of the coconut for cooking, religious worship, skincare, etc.
As an Indo-Caribbean, i found some of this video to be culturally insensitive. It's one thing to not acknowledge a culture, it's another thing to broadly label a cuisine as another ethnic groups cuisine when some parts of it are not.
Had you labeled your video "Caribbean food cookout" or "Indo-Caribbean and Afro-Caribbean food cookout" then i'd have no problem. Just be considerate, Trinidad is a diverse place.    See Less
