I just gotta say, as a former in-n-out employee (the originator of the Flying Dutchman), wrapping the burger in onion is NOT what a Flying Dutchman is. Originally it would be burger-cheese-pickles-cheese-burger but it got fairly popular a while ago to add whole grilled onion to it. But it was never wrapped in the onion
Looks good but the burgers should definitely be super thin smash burgers. Gives a much better texture to the burger, easier ergonomics, and a better burger to onion ratio imo!

Batter and deep fry the onion slices. It would be easier to handle, look like a bun, and taste like an onion ring.
I feel like if those onions were battered in breadcrumbs it would work a lot better. You know.. adding bread.
