My local sushi place has monorails. They used to use cat robots but switched them out this year due to the robots malfunctioning every time someone spilt water on the floor
My first sushi experience as a 12 year old was with little boats in a little canal (in the 80's and sadly gone now). But it moved slowly enough for you to pick and choose (whereas the monorail delivers what you order). Both are much more fun than a conveyer belt. I feel like some sort of helicopter or hang glider theme would be cute too.
Here on Hawaii, we have something similar at Genki Sushi. It started out with conveyor belts for years, and recently moved into using a rail system. Probably to minimize wasted food. Love that you got a cool new experience!
